Super Bowl LI is quickly approaching, and all I can think of are…….snacks!#thefoodbloglife A little disappointed that my team didn’t make it,(so, so close!) but hey? It’s all about that food, right? Haha. I’ve been planning my menu today (yes, I started almost a whole week early! Incredible! 😉) and this dip is a must. As you can tell, the ingredients are all pantry staples and literally come together in under 10 minutes.
This dip is my go-to and a family favorite when it comes to fast snacks or meatless dinners. Because, Mexican!!!! And cheese. And tortilla chips. And cookies.
(Note to self: we are working on savory today, not sweet. Savory.) No explanation is really necessary here. ⬆️️

3-ingredient Mexican Bean Dip
Yields: 6 servings
- 1 16oz can refried beans
- 1 cup thick salsa
- 6 oz processed cheese*, sliced thin
- Heat refried beans in a non-stick skillet over medium heat until heated through, stirring as needed. Continue stirring and add salsa.
- Once mixture is bubbly, add cheese. Stir until cheese is fully melted and combined. Dip with tortilla chips, fritos, pita chips, or whatever you have on hand! Leftovers can be refrigerated for up to 3 days.
*Such as Velveeta. Natural cheese will work as well, depending on what you prefer.
